My name is Lindsay and I am an American girl from the very sunny state of Arizona now living in Leicester, England. I have been vegan since 2014, and am an AFPA certified nutritionist. 

Since making the change to veganism, I have been on a mission to veganize some of my old favorite foods and share them with you here. I will also share my dining and travel experiences in the hope of helping other vegans. 

I am also an illustrator and have an online shop with Redbubble. You can see my current designs at diddybelle.redbubble.com.

    Wow it sounds like you’re living an awesome life! My husband actually ended up changing my eating habits inadvertently as well; he grew up without red meat, where as my parents love it and served it often. When we moved in together I didn’t buy it because I didn’t want to have to cook two dishes. Then through time I began to learn more and more about food and am now eating poultry or fish only 3 or 4 times a week and eating vegetarian for the other days. That number is probably going to go down as I get older and choose to go even more meat free. Good luck to you, your blog looks great!       thanks for the comment! It’s amazing how over time it really gets easier to live without meat and it doesn’t feel like you’re deprived of anything. I realized before making the conscious decisions to go more vegan, that most of what I was cooking was vegan anyway, who knew! I’ll be sure to check out your blog: )

        It’s been happening that way for me too, one day I realized I’d been eating vegetarian a few times a week and was pleasantly surprised! I definitely don’t feel deprived, that’s why I think a lot of people are hesitant to try, they think they wont feel satisfied.

    Just found your blog, love it! Where in Az are you from? I’m from Tucson, currently living in Napa, Ca! Recently started delving into vegan life after switching to vegan skincare made such a difference for me! Loving it so far! Thanks for your blog. 🙂

    I have just come across your blog, I went to uni in Leicester and come back every few weeks to see friends so I am interested to see any reviews you have done of the area 🙂 I am also a vegetarian and find dining out can be so hit or miss!! Most restaurants are getting much better though. Great blog, glad I found you!
