First BBQ of the summer

Before I moved to the UK I liked BBQ’s as much as the next person. I mean, who doesn’t like cooking tasty food al fresco, cold drink in hand while enjoying the company of good people?

But since moving to the UK, my like for BBQs has turned into an obsession. I had no idea how popular they were over here – people LOVE cooking over a hot grill in the summer. I guess it’s rubbed off on me, because now it’s one of my favorite things to do on a summer weekend (or a nice weekday evening).

So you can imagine my excitement when on Sunday we had the first really sunny, warm day here in Leicester. I jumped all over it and planned a nice BBQ dinner for me and Andrew which included veggie burgers, grilled veggies (onions, bell peppers, courgettes, asparagus and mushrooms) and some boiled baby new potatoes.

Oh sweet deliciousness! everything just tastes so darn good when eating outdoors in the sunshine, listening to the soft rumble of neighbors taking advantage of a lovely sunny day.

To prepare the food, all I do is lightly coat the veggies in olive oil, salt and pepper and then grill until soft and cooked through. With the veggie burgers, grill according to the pack and add whatever condiments you like. For our burgers I made a vegan chipotle mayo dressing and served them with avocado and carmelised onions. It’s really one of the easiest dinners to make. Probably the hardest part is getting the grill fired up – but that’s Andrew’s job 😉

Here’s hoping we have many more sunshiney summer days so we can continue to enjoy lazy BBQ afternoons.
