Tucson, part 1

As some of you may know, I’m in Tucson! Tucson to me is home – this is where I went to high school and then university, it’s where my friends and family live and it holds so many memories for me. We’re here for a while, so even though this is a Leicester blog, I wanted to share some of my adventures with you (both culinary and otherwise). Here is a snapshot of some of the shenanigans we’ve been up to, as well as some of the really fantastic vegan food we’ve been stuffing our faces with (Tucson is incredibly vegan-friendly).

Our plane food on United was ok – we had a soy “chicken” green curry. I prefer the vegan Indian curries we normally get, but this was not too bad.

The first couple days in Tucson we had torrential rain. Bad for us, great for the desert and anyone who lives here year round. Our first meal back consisted of tacos (obviously), and I may have gone a bit crazy at the salsa bar.

Vegan breakfast burritos! We met my sister at Blue Willow one morning as it’s one of our favorite spots for brunch, and has an extensive vegan menu. I had the vegan breakfast burrito which had pan fried chunks of tofu, crispy potatoes, guacamole and green chillies. Perfection.

We had dinner with friends at Falora in Tucson. Here we had the vegan marinara pizza and one of the best kale salads I’ve ever had. Apparently they massage the kale, which removes some of the bitterness and makes it a bit sweeter (who knew!).

Tucson has some great health food grocery stores, including Sprouts, Trader Joe’s and Whole Foods (not pictured), to name a few. I felt overwhelmed walking into them again after a year away. So this is just a snapshot of what we’ve been up to.

My mom has also been cooking up some fantastic vegan home comfort meals and I keep meaning to take pictures, but my stomach ends up taking over my brain and before I know it my plate is licked clean before I remember to reach for my phone. Stay tuned for part 2 of our Tucson adventure!
